Joshua Summers, Vice President of Food & Beverage at Fontainebleau Miami Beach, brings two decades of Food & Beverage leadership to the iconic hotel. Summers’ extensive and reputable experience running multi-unit operations positioned him as the ideal candidate to run the property’s food and beverage department. Summers is responsible for directing and developing Fontainebleau Miami Beach’s multi-million dollar operation composed of 12 food and beverage outlets – including, fine dining, casual restaurants, bars and lounges – as well as service for over 200,000 square feet of meeting and convention space.

Summers’ portfolio includes the Zagat-rated and AAA 4 Diamond award-winning Italian restaurant Scarpetta; the first American outpost of London’s Michelin-starred Hakkasan, also Zagat rated and James Beard award-winning Chef Michael Mina’s two restaurants – the recently opened, contemporary steakhouse StripSteak by Michael Mina and award-winning Pizza and Burger by Michael Mina; as well as LIV, South Florida’s quintessential nightclub which has been rated among top nightclubs in the world.

Prior to Fontainebleau, Summers directed the Southeast Region for Stephen Starr Restaurants. During his seven year tenure from 2007-2014 Summers oversaw all outlets of the W Hotel Fort Lauderdale as well as Makoto in Bal Harbour Shops and Verde at the PAMM in Miami.

Before joining Starr, Summers held leadership roles with MGM Mirage in Las Vegas and served as Director of Beverage for the Mandalay Bay Resort. He spent several years with Starwood Hotels and Resorts, opening the W Hotel Westwood, rebranding the Westin Century Plaza and St. Regis in Los Angeles, opening the Westin Diplomat and the Wild Horse Pass Resort in Phoenix.
