Executive Chef
Originally from Hong Kong, Chef Hing Fung Matt Chan brings over 30 years of culinary expertise rooted in Cantonese and regional Chinese cuisines. Since launching his career with a prestigious hospitality group in Hong Kong, he has held executive roles at luxury Chinese restaurants across the U.S., including CHINA EPCOT at Disney World.
Lead Sommelier
Erica Lozano, the lead sommelier at Hakkasan Fontainebleau Miami Beach, brings over a decade of experience in the hospitality industry. Certified by the Court of Master Sommeliers, her extensive knowledge of wine and sake is a testament to her ongoing dedication to mastering her craft.
