After 15 years of cooking some of New York’s favorite Italian cuisine, Scott opened Scarpetta in 2008 to rave reviews and an enthusiastic following that helped establish him as one of the country’s preeminent Italian chefs. Since 2008, Fontainebleau has been fortunate to have Scott dedicate that same passion to the Scarpetta right here. Both locations were included in the 2009 “50 Best New U.S. Restaurants” feature in Travel+Leisure magazine. He has since opened other fine dining restaurants and bars across the country.
