    Chef De Cuisine
    Michael Hawk is the chef de cuisine at La Côte, Fontainebleau Miami Beach’s chic ocean-side bistro specializing in French Mediterranean cuisine. The Ohio native brings his passion for cooking and well-rounded industry experience to the dynamic culinary team at Fontainebleau Miami Beach. Hawk received a culinary arts degree from New York City’s Institute of Culinary Education in 2003. The budding chef went on to work as sous chef at Alice’s Tea Cup in New York City. After a brief stint in Toledo, Ohio, Hawk ventured to Miami Beach, where he became sous chef of Vix at Hotel Victor. Hawk then returned to New York in 2007, where he spent four years working as a senior sous chef at the Marriot Marquis in Times Square. Captivated by Miami’s energetic and rapidly expanding culinary scene, Hawk went back to Miami in 2011, where he joined Fontainebleau Miami Beach as Sr. Sous Chef of Banquets.
